The price is right but there is waaaaay too much silver skin that needs to be removed before you can cook the meat. I removed almost 6 ounces from a piece that was less than 3 lbs. Not only is it time consuming, but it makes the actual price much higher. I wanted to post a picture of the silver skin removed but it doesn’t seem to be an option.

Excellent quality meat. A sear-then-sous vide technique cooks up like prime rib.

If you have an entire day and a serious love of cooking, then go ahead and get this product. If I could figure out how to post a picture of this I would. I literally spent 2 hours removing sinuous tendons from about 3-4 lbs of london broil. Tedious and frustrating! The bonus, I guess, meat is very tender once you are actually ready to grill it.

Individual pieces are not very big but very tasty.
