Excellent quality meat--no gristle texture as opposed to shoulder clod. Roughly half resembles rib, roughly half resembles lean stew. All turns into delicious steak or roast beef with the help of a sous vide. Note that both pieces I opened had a 5" line of what appeared to be congealed blood so I removed that part.

This is grass fed meat so it takes a long time in an oven to soften this up(use low heat). I use my sous vide and it softens it up well then if finish it in the smoker or oven and it makes a decent roast.
