I used to like ordering this product, but in recent times every package has at least 60% fat in it. very disappointing.

The meat is heavy on gristle, not really that fatty, not really that flavorful. It ends up drier than I'd like in the cholent. It is an OK value for the price, but my search for the perfect rich, fatty, tender, and cheap cholent meat will have to continue.

I ordered this again after several years and I’m really disappointed that the packages are more than half huge chunks of fat. Much of it is inedible.

We have really been enjoying this meat. I have slow cooked it and it's quite tender and delicious. No complaints.

Like all grassfed meats, this needs REALLY slow stewing. I usually leave it in the oven set to 200 for 6 hours or so, then add potatoes/rice/buckwheat etc the pot and finish on the stove. The flavor is delightful. Small drawback - the meat is cut extremely unevenly. Some pieces are large - 2" on the side, while some are as thin as .5".

very tasty: make sure to braze first. Proper only for chulent or stew meat.

Sad to say we have found this tough and gristly. I wouldn't buy it again. I have used it in stew, soup, and long-cooking sauce, but it just doesn't get very tender. I think next I'll try extremely long cooking on low in the oven; maybe that will work. The 2-lb packages were the most convenient size available, which is why we bought it.
